Summertime is the perfect excuse for a nice cool Margarita or two! They’re just soooo refreshing! Having a slightly sweet, citrus sourness with a little kick of salt, they complement summer perfectly. The drinks are crazy delicious, bursting with flavor, so why not create some awesome desserts? I’ve made margarita cakes, cupcakes, and cookies, and this time around I’ve opted to make this warm-weather, cocktail inspired dessert in the form of meringues.

I got all my ingredients out and whipped up some Margarita Meringues! The perfect summertime cookie. They’re a traditional light, fluffy, melt in your mouth meringue, but infused with lime and tequila. Add a bit of flake salt and they’re perfect. Quite addicting actually. Plus, this cookie doesn’t take but just a few ingredients! Sugar, egg whites, lime juice, lime zest, tequila and salt.
The flavor combination of the meringue itself is a journey of sweet, tangy, sour, salty which never gets old. It has just the right amount of citrus to cut through the sweetness, and at the end, you get a slight hint of tequila. It all wraps up into one nice little bite! Also, get a little creative and serve alongside some sliced strawberries and whipped cream! Who doesn’t love a strawberry margarita?
Let’s Start Baking Margarita Meringues
Meringue isn’t hard to whip up: Just egg whites and sugar. To start, add the egg whites and sugar together over a double boiler. Melt the sugar completely then transfer into mixing bowl with the whip attachment. I like to melt the sugar or it remains granular giving it an odd mouthfeel. Whip until fluffy and medium-stiff peaks form. At this point zest you limes and add to the meringue. On a side note, I’ve tried cutting off the rind and finely chopping it, but it just doesn’t compare to a zester! It’s a must have kitchen tool! Zulay has the best!
Next, add lime juice. I used my new Zulay juicer. It was easy and got every last drop of juice from the limes!

Lastly, add the tequila. Mix until all the ingredients are fully incorporated together!
Preheat your oven to 200 degrees Fahrenheit and line a baking sheet with parchment paper. Since these are lime flavored, I like to add a bit of green food coloring. Not to the batter itself, but maybe a line or two down the side of the piping bag. First, prepare your bag with a large star tip. Then with a skewer, line the bag with green food coloring. This will lend to a neat swirl design. Pipe onto your baking sheet into little rosettes.
Immediately sprinkle on the salt and place into the oven for about 1 hour. Note that the addition of salt is totally optional. After the hour has passed, turn off the heat while the cookies remain in the oven until cool. Take out and enjoy!

When working with lemons and limes or any citrus, make sure you have the right tools! A zester is a must and needs to be a part of your kitchen tool belt as well as a citrus squeezer. Find my favorites here and get them delivered straight to your countertops!
Light, melt in your mouth, limey with a hint of salt, these Meringues are the perfect summer dessert!
- 1 Cup Egg Whites
- 2 Cups Granulated Sugar
- 2 Each Lime Zest zest of two limes
- 2 Tbsp Lime Juice
- 2 Tbsp Tequila
- 3-4 Drops Green Food Coloring
- To Taste Salt Optional
Over a double boiler, add sugar and egg whites. Warm until granulated sugar has melted completely into the egg whites.
Pour into mixing bowl and whisk on medium high speed until light and fluffy and medium peaks form.
Add the lime zest, lime juice and tequila. Whisk until fully incorporated, about 30 seconds to a minute more.
Prepare baking sheets with parchment paper. Prepare piping bag. Fit with a medium star tip and add a line or two of green food coloring along the sides of the bag with a skewer. Add meringue and pipe into rosettes.
Sprinkle very lightly with salt, which is optional, and place into the preheated oven for 1 hour. After the hour turn off the oven and while keeping the Meringues in the oven until cool.
Once cool, take out of the oven and enjoy!!!
