Happy Thanksgiving!

Thanksgiving is a day that reminds us to give thanks and reflect on our many blessings! But while we are in the midst of thinking about all we are thankful about, this day is set aside to also celebrate, and as you all know, every celebration at my house needs cake! I am most definitely always thankful for cake! Along with cake, it’s a day to eat, eat and eat, and that’s exactly what I’ll be doing! I love nothing more than making delicious food and desserts for my friends and family. But also sitting down, relaxing and enjoying it with them together.

Thanksgiving Dessert

Thanksgiving dessert is usually all about pie. Pumpkin pie, pecan pie, apple pie, sweet potato pie, chocolate pie, pie, pie, pie all around. You name it. I assure you, I have nothing against pie. I’d be fully content having a slice or two, but this year, as I am always in charge of dessert, I wanted to give my friends and family an epic cake. I am so proud of it and wanted to share it with you all!

With inspiration from the Cheesecake Factory, I went all out just like all of their creations. Layers upon layers of sweet goodness. Mine is pumpkin cheesecake (with an Oreo crust), brownie and chocolate mousse topped off with dark chocolate icing and mini chocolate chips. Then, just to top it off properly and bring all the flavors together, I put a few dollops of pumpkin mousse around the top edge. I call it the Pumpkin Cheesecake Chocolate Explosion! Guys, it’s going to be amazing!

Sure, it has a more than a few components, but I have no shame in this being semi-homemade. (I was seriously crunched for time). I made a box mix brownie. Choose your favorite and make it into a 6 inch circle! I also bought chocolate mousse from Whole Foods Market. If you’ve never tried it, you’re in for a treat. It’s silky smooth, fluffy dark Belgian chocolate. So incredibly yummy. I did, however, make the pumpkin cheesecakes (6 inch). One with the Oreo crust and one without. I don’t make cheesecake often so I found a great recipe on Pinterest. I also made the pumpkin mousse, and the chocolate icing (find the recipe here) was easy enough to make ahead. Before I go any further I’ll list out what went into this delicious cake and how it stacked up!

The Layers

  • Oreo Crust
  • Pumpkin Cheesecake (with crust)
  • Brownie
  • Pumpkin Cheesecake (without crust)
  • Chocolate Mousse
  • Chocolate Icing 
  • Mini Chocolate Chips 
  • Pumpkin Mousse 

I’d strongly advise you to make this over the course of two days, if you’re going to take on this task! The cheesecake itself takes quite a long time to bake and cool, so make this day one and cool overnight so it will set up properly. Make your icing, mousse and brownie as well. That way, day two is just assembly! It’s a lot of work, but totally worth it! It’s SO DELICIOUS! 

Although describing this cake as delicious just doesn’t do it justice! It’s so chocolatey, rich, sweet with a contrast of fluffy and dense textures. Also, the pumpkin complements the chocolate so perfectly! Every bite is a party in your mouth!

To Assemble the Cake

On a cake plate, place your first layer of pumpkin cheesecake. The one with the Oreo crust. The next layer is the brownie and then another layer of cheesecake. At this point, place a parchment collar around the entire cake. This will keep the next layer, the chocolate mousse, from oozing over the sides. Freeze it for an hour or two until it sets up nicely. Next, take the parchment off and ice around the side of the cake covering it completely. Immediately press mini chocolate chips into the icing. To finish the cake, dollop or pipe pumpkin mousse around the top edge.

Christmas Time

This would also make a great Christmas dessert as well. Maybe swap out the pumpkin cheesecake for a peppermint, vanilla bean or raspberry cheesecake. Yum! Although I’ve not tried these yet, they sound super incredible. I just might have to make this dessert again! I know it will be a hit!
