If you’re in love with almond, these double almond cookies are for you! They’re a simple, sweet almond sugar cookie filled with a delightful almond paste.
I personally can’t get enough almond in my life! Whole almonds, almond paste, almond flour, almond milk, almond extract and love it utilized in cakes, cookies, icing, macaroons, marzipan…my favorite, or even savory dishes. Being mild, slightly bitter, with a hint of sweetness, it’s nutty goodness that’s really quite indescribable. Almond flavor is in a category of its own, and when paired with numerous other ingredients, it complements and enhances their flavors.
Double Almond Cookie Fanatic
I came up with this recipe because, while on vacation in Boston a few months ago, I came across this incredible cookie. Nothing fancy to look at, but after one small bite, I was in awe. Explosions of sweet almond flavor filled my mouth, and I knew right then, I needed to slip a few more into my bag! I made excuses to go back to the bakery just so I could stock up again and again. They were that amazing. As many as I devoured, I never got tired of them. Not for one second!
But all good things do come to an end, even if just for a moment. Cue the tears…leaving Boston was hard. I had to part ways with my daily cookie (plus a few more!), but as soon as I hit home, I was in my kitchen trying to replicate this almond goodness. Tasty almond paste enrobed in an sweet almond sugar cookie or shortbread type dough. It was time to do some hard core baking! I needed these cookies back in my life as well as all of my friends and family’s lives.
In my version, it starts with an almond sugar cookie dough. Being pretty simple, it’s quick to put together.
Let’s Start Baking
Step 1: Cream together butter and sugar until light and fluffy. Don’t forget to scrape your bowl from time to time to make sure everything is incorporated.
Step 2: Add eggs and almond extract. Mix well until smooth.
Step 3: Lastly, add the baking powder and flour. Mix until fully combined.
Step 4: Portion out into 1” balls and place a small divot in the center with your thumb.
Step 5: Open the almond paste and place a small amount, about a teaspoon in the center. Cover completely with cookie dough and roll in granulated sugar.
Step 6: Place into a greased or parchment lined cookie sheet and slightly press down with the back of a glass. (To about a 1/2 an inch). Just to flatten it out just a bit. Place into a 350 degree Fahrenheit oven for 12-14 minutes. Take out of the oven and cool.
Step 7: Enjoy! Enjoy all of them!!!
Double Almond Cookies
The perfect almond paste stuffed sugar cookies.
- 1/2 Cup Unsalted Butter softened
- 1 Cup Granulated Sugar
- 1 Each Egg
- 1/2 tsp Almond Extract
- 1/2 tsp Baking Powder
- 1/4 tsp salt
- 1/2 Cup Almond Paste
1. In a large bowl, cream butter and sugar together until light and fluffy.
2. Add egg and incorporate well.
3. Add almond extract.
4. Scrape bowl well and add the flour, baking powder and salt. Mix completely.
5. Scoop into 1” balls and place a small divot in the middle. Add a small amount, about 1 tsp of almond paste into it.
6. Pinch closed and roll into a ball with no almond paste showing.
7. Roll into granulated sugar and place into a parchment lined or greased cookie sheet.
8. With the back of a glass, flatten just a bit. To about a 1/2 inch.
9. Place into a 350 degree Fahrenheit oven for 12-14 minutes.
10. Cool and enjoy!
