No-Bake Almond Cookies: Easy, Fast & Amazingly Tasty

If you’ve ever had the traditional no bake cookies (made with oats and peanut butter), these are a fun spin on them. No-bake Almond Cookies!

Made with almond butter, almond milk, brown sugar, and slivered almonds, these no-bake almond cookies have an almondy twist. They’re amazingly delicious.

Craving Something The Same…But Different

Although I’m in complete love with the classic no bake cookies, I was craving something a bit different, but not compromising on the texture or structure of the cookie. Just a tweak in flavor would do the job! I put my apron on, started experimenting and came up with pure yumminess! 

Guys, they’re SO addictive! So crazy delicious. Not to mention, incredibly easy to make! 


Almond Is Where It’s At

It’s the same great cookie, but with a whole new flavor profile! Almond!!! (I can’t get enough of almond anything!) Instead of peanut butter, I used almond butter and in place of milk, I opted to use almond milk. Along with the oats, I added blanched, toasted slivered almonds. The crunch factor is on point and so is the flavor. They just elevate the cookie to the next level of yumminess! Add a dash of almond extract just for an extra almond kick!

Toast the Almonds

Before you start anything, toast the almonds. It improves their texture making them much more crunchier, and it intensifies and brings out a nuttier depth of flavor. It’s seriously easy. Place onto a baking sheet and put into a 350 degree oven for about 10 minutes. Don’t forget about them! (I say that, but it happens to me every time)! You’ll be able to smell the wonderful aroma and when you open the oven, they’ll have a slight browning to them.

Let’s Make Some No-Bake Almond Cookies

Meanwhile, in a medium-sized sauce pot over medium heat add unsalted butter and melt it completely. Next, add brown sugar, granulated sugar and salt. Stir until combined and all the ingredients are melded together. Take off the heat and stir in a splash of almond extract, along with the almonds and oats. Stir until everything is incorporated completely. Drop, by the spoonful, onto a parchment lined sheet pan. Cool completely and enjoy immensely. They even seem kind of healthy! Just a little bit! Maybe? Probably not, but I can dream!

  • 8 Tbsp unsalted Butter
  • 3/4 Cup Brown Sugar
  • 3/4 Cup Granulated Sugar
  • 1/4 tsp Salt
  • 3/4 Cup Almond Butter
  • 1/4 Cup Almond Milk
  • 2 3/4 Cups Oats
  • 1/2 Cup Slivered Almonds Toasted
  • 1/2 tsp Almond Extract


  1. In a medium sauce pot melt the butter over medium high heat.

  2. Add the brown sugar, granulated sugar, almond milk and salt. Being to a boil for about one minute.

  3. Add in the almond butter. Stir until completely smooth and incorporated.

  4. Remove from heat and add the oats, slivered almonds and the almond extract. Stir well until it starts to cool.

  5. On a parchment or wax paper lined sheet pan, scoop a tablespoon at a time. Allow to cool completely to set

  6. Enjoy!
