These cookies are downright addicting which is super dangerous to my waistline because one is never enough! White Chocolate Macadamia Nut Cookies are fabulous on their own (my absolute favorite cookie ever), but add pumpkin and spice and everything nice, and a cookie that’s already the best gets even better! The white chocolate chunks are amazing and the macadamia nuts add such an amazing crunch!
When it’s pumpkin spice season you expect pumpkin spice and these cookies deliver. They are heavy on the spice, but it balances so well with the white chocolate and macadamia nuts. They are moist and chewy and dense.
Making these fabulous cookies!
First off, gather all your ingredients, turn on your oven (350 degrees Fahrenheit) and get out your mixer.
Step 1: Cream the butter and sugar together. It is important to mix well so you won’t have any butter lumps in your batter.
Step 2: Add the egg and vanilla and mix.
Step 3: Next, add the pumpkin. During this step I also add the salt, baking soda, pumpkin spice and cinnamon as well.
Step 4: Add the flour to the mixture. Mix just until incorporated.
Step 5: Lastly, add the white chocolate chips and macadamia nuts and mix in with a spatula or large spoon.
Step 6: Take a cookie scoop and place on a lightly oiled baking sheet one inch apart. Place in the oven for 10 to 12 minutes.
Step 7: Check your cookies and take them out of the oven. I slightly under-bake them to keep in more moisture keeping them soft and chewy.
Step 8: Enjoy!!
PUMPKIN White Chocolate Macadamia Nut Cookies
Sweet and spiced delicious soft cookies!
- 1 cup Butter
- 1 cup Brown Sugar
- 1/2 cup Granulated Sugar
- 1 each Egg
- 1 tbsp Vanilla
- 2/3 cup Pumpkin
- 2 1/2 cups Flour
- 1 tsp Baking Soda
- 1/2 tsp Salt
- 1 1/2 tsp Pumpkin Spice
- 3/4 tbsp Ground Cinnamon
- 2 cups White Chocolate Chips
- 2 cups Macadamia Nuts
Preheat the oven to 350 degrees fahrenheit
In a mixer, cream the butter, brown sugar and granulated sugar
Add egg, vanilla and pumpkin - mix well
Add salt and baking soda, pumpkin spice and cinnamon
Add flour and mix until just incorporated
Stir in the White Chocolate Chips and Macadamia Nuts
Grease a sheet tray and place by the spoonful or cookie scoop one inch apart
Bake 10-12 minutes or until slightly golden - do not over bake as these cookies are amazing just under baked!
- Do not over bake as these cookies do well slightly under baked and will stay soft and chewy
- These cookies are heavy on the spice, however, feel free to add less.
- Feel free to omit the white chocolate chips or macadamia nuts
