Roasted pumpkin seeds remind me of nearly every Halloween growing up. My sisters and I would have so much fun just taking the pumpkin “guts” out getting our pumpkins ready to carve. Separating the guts from the seeds was just part of the process for me.
I loved pumpkin seeds, probably more than anyone in my family, so I took my job of making them very serious. I would meticulously pick every pumpkin seed from the pumpkin guts and place them in a strainer. The process of making them was just as rewarding as getting to eat them and share them.
It’s something I have taught my girls that they have grown to love as well.
Making Roasted Pumpkin Seeds
You’ll need a pumpkin, of course! Most of mine came from jack-o-lantern pumpkins, but if you roast pumpkins for their purée from sugar/pie pumpkins – those work well too.
Step 1: Turn on your oven to 400 degrees Fahrenheit and start by cutting the top off your pumpkin. Next grab a spoon and take out the “guts” and place them in a large bowl. The guts and seeds will be all mixed up in a slimy mess, but not to worry!
Step 2: From here, you’ll want to pick out all the pumpkin seeds – I like to place them directly in a strainer because you’ll want to wash them before roasting them. Wash them well, but don’t pat them dry.
Step 3: Spread them out evenly on a cookie sheet. It’s perfect that they are still damp from washing. If you want to salt them, their dampness will allow it to stick. Sprinkle just a pinch of salt on all the seeds evenly. If you want to get crazy, you can add whatever seasonings you like! Pumpkin spice pumpkin seeds anyone…?!
Step 4: Place them in your 400 degree oven for about 10 -15 minutes, stir, then keep in the oven 5 more minutes. Leave them in longer for crispier seeds. Take them out and let them cool completely. Place them in an air-tight container for up to two weeks.

Making these can become a fun fall and Halloween tradition as it was and still is for my family.

Roasted Pumpkin Seeds
- 1+ Pumpkins
- 1 Pinch of Salt
Preheat oven to 400 Degrees Fahrenheit
Take your pumpkin and extract the "guts"
Separate the pumpkin guts from the seeds
Place seeds in a strainer and rinse
Do not dry seeds (this will allow salt or other seasonings to stick) - place seeds on a sheet pan and spread out
Sprinkle a pinch of salt (or desired seasoning) over the top of seeds
Place in the oven for 10 - 15 minutes, stir, then let bake 5 more minutes
