Sweet Cornbread is first and foremost crazy delicious! It’s tender, fluffy, moist, slightly sweet, not too sweet though, and bursting with whole corn kernels. It’s amazing slathered in butter and honey or is perfect as an accompaniment to many savory dishes such as chili, or a hearty soup, or even BBQ! It’s the best around!
The Perfect Cornbread
It’s simply the most perfect cornbread! This particular recipe has a few more ingredients. It has all the ingredients of a traditional cornbread, but the extra ingredients add the perfect amount of decadence. It has sour cream, buttermilk, and some whole corn kernels which make it heartier and add a bit of texture! And if you’re in the mood for cheesy, then feel free to add a bit of shredded cheddar! I also, on occasion, like to add green chilis. They add a delicious pop of flavor!
Let’s Make Some Sweet Cornbread
It’s simple to make!
Step 1: Get out a microwaveable bowl and start out by melting the butter.
Step 2: To that, add the sugar, salt, eggs and buttermilk.
Step 3: Next, add the dry ingredients, flour, cornmeal, and baking soda. Stir it just until it comes together.
Step 4: Lastly, add and mix in the sour cream. Optional: add cheddar cheese or green chilis or both at this point if you’d like.
Step 5: Pour it into a greased 8×8 inch pan or similar and bake it at 350 degrees Fahrenheit for 35 – 50 minutes or until a toothpick comes out clean.
Step 6: Immediately enjoy warm or save for later (if it lasts that long)! Keep it wrapped for up to three days.
If you do happen to have leftover cornbread, Thanksgiving isn’t too far away. Save it to make my delicious Simple Stuffing with cornbread! Just throw it wrapped up tightly in the freezer, for up to three weeks or until you need it!
Sweet Cornbread Recipe
The most delicious, tender, fluffy, and moist cornbread around!
- 1/2 Cup Butter 1 Stick
- 1/2 Cup Granulated Sugar
- 1 Egg
- 1/4 tsp Salt
- 1 Cup Buttermilk
- 1/2 tsp Baking Soda
- 1 Cup Cornmeal
- 1 Cup All Purpose Flour
- 1/2 Cup Sour Cream
- 3/4 Cup Frozen Corn
- 1/2 Cup Shredded Cheddar Cheese Optional
- 1 4oz. can Green Chilis Optional
In a microwave safe bowl, melt the butter.
To that, add the granulated sugar, salt, egg. Mix thoroughly.
Add the buttermilk. Mix well.
Then add the dry ingredients. Cornmeal, flour and baking soda. Just mix until combined. Do not overmix.
Lastly, add the sour cream. Add the optional ingredients at this point as well.
Pour into a greased 8x8 inch, or similar pan and bake at 350°F for 40 - 50 minutes or until a toothpick inserted comes out clean.
If you don’t have buttermilk, you can make your own. For every 1 cup of milk add 1 Tablespoon of lemon juice or vinegar. You can also just use plain milk in this recipe.
If you’d like cheese, add 1/2 cup cheddar, and if you’d like to add chili’s, one can, drained is always a good amount.
