Vanilla is the best flavor around. Wouldn’t you agree? It’s subtle enough to put in just about every baked good, but flavorful enough that it can certainly hold its own. Perfect for Vanilla Bean Cookies!
Bursting With Vanilla Flavor
Vanilla Bean Cookies are bursting with vanilla flavor drenched with a sweet vanilla icing. Flavored with vanilla using vanilla bean and vanilla extract, they can’t get any better! (I feel like all I’m saying is vanilla)! They’re perfectly sweet, slightly chewy, with crunchy edges. The texture is amazing! Then to make things sweeter, an icing is drizzled on and ahh…one just isn’t enough! Seriously!
Let’s Talk Vanilla
Let’s talk vanilla. Vanilla beans come from a tropical orchid. After a labor-intensive process from picking the beans to preparing them, after 12-18 months, they’re ready to use! But being such a long process, they’re quite expensive!
It’s totally worth it! However, they are a little spendy. If they do break the bank, extra vanilla extract always does the trick. No need to stress! Or, vanilla bean paste is a great alternative too. It is thick and syrupy with vanilla bean flecks suspended usually made without alcohol. Vanilla bean paste is usually my go-to vanilla.
Make Your Own Vanilla
I also like to make my own vanilla. My parents went to Hawaii on vacation a while back and bought me a “prize!” It was a bottle with a couple vanilla beans inside. On the back label, it said just add vodka and place in a cool dark place for about 6 months. I’ve been adding vanilla beans and more vodka ever since. It’s nice to have on hand.
Let’s Make Vanilla Bean Cookies
Step 1: Cream the butter, shortening and sugar together until light and fluffy.
Step 2: Add the eggs and vanilla, both the extract and vanilla bean, and mix until fully incorporated.
Step 3: Add the dry ingredients.
Step 4: Spoon onto a cookie sheet about the size of a tablespoon. Or use a cookie scoop!
Step 5: Bake at 350 degrees Fahrenheit for 8-12 minutes. Don’t overbake!
Step 6: Once cool, drizzle with a sweet vanilla icing! It’s simply powdered sugar, milk and vanilla! Nothing fancy, but it really takes the cookie to the next level!
Step 7: Enjoy!!! They’re very, very vanilla!
If you don’t have a vanilla bean or vanilla bean paste, don’t fret, extra vanilla extract always works well!
Don’t over bake. The cookies will be hard and crunchy. That’s just not my scene!
There’s no need to put the dough in the refrigerator. Make the dough and bake!
If you want to switch things up a bit, replace the vanilla with almond extract. Then drizzle the cookies with an almond icing! All I can say is, yum!
Very Vanilla Cookie Recipe
Very Vanilla Bean Cookies
A sweet, chewy cookie that’s satisfyingly vanilla!
- 3/4 Cup Butter Unsalted
- 1/4 Cup Shortening
- 1 1/2 Cups Granulated Sugar
- 2 Eggs
- 2 1/2 Cups All Purpose Flour
- 2 tsp Baking Powder
- 1 tsp Salt
- 1 Tbsp Vanilla Extract or Vanilla Bean Paste
- 1 Vanilla Bean (Optional) Seeds Scraped Out
Cream together the butter and shortening until light and fluffy.
Add the sugar.
Add the eggs, salt and vanilla and mix well.
Add the baking powder and flour. Mix until fully incorporated.
Scoop, about 1 Tbsp each, onto a greased or parchment lined baking sheet and bake at 350°F for 8-10 minutes. Do not overbake.
Cool, drizzle with vanilla icing (next recipe) and enjoy!

Very Vanilla Cookie Icing
A simple sweet, vanilla icing. A perfect addition to Very Vanilla Bean Cookies.
- 1 Cup Powdered sugar
- 1-3 Tbsp. Milk
- 1 tsp Vanilla Extract or vanilla bean paste
- 1 Vanilla Bean (Optional) Seeds scraped out
Add together the powdered sugar and 1 Tbsp of the milk and vanilla. Stir until completely incorporated.
If the icing is too thick, add some milk little by little until a drizzling consistency is achieved.
Drizzle over your favorite cakes and cookies!
