Light, melt in your mouth, limey with a hint of salt, these Meringues are the perfect summer dessert!
Over a double boiler, add sugar and egg whites. Warm until granulated sugar has melted completely into the egg whites.
Pour into mixing bowl and whisk on medium high speed until light and fluffy and medium peaks form.
Add the lime zest, lime juice and tequila. Whisk until fully incorporated, about 30 seconds to a minute more.
Prepare baking sheets with parchment paper. Prepare piping bag. Fit with a medium star tip and add a line or two of green food coloring along the sides of the bag with a skewer. Add meringue and pipe into rosettes.
Sprinkle very lightly with salt, which is optional, and place into the preheated oven for 1 hour. After the hour turn off the oven and while keeping the Meringues in the oven until cool.
Once cool, take out of the oven and enjoy!!!
