Homemade Pumpkin Puree

Ingredients

  • 1 each Sugar Pumpkin / Pie Pumpkin
  • 2 tsp Olive Oil or Light Cooking Oil

Instructions

  1. Preheat the oven to 400 degrees Fahrenheit

  2. Take your pumpkin and clean it and dry it

  3. Place your pumpkin on a level surface and cut it directly down the middle

  4. Scrape the pumpkin halves clean - the "pumpkin guts," seeds and all in a scrap bowl

  5. Next, take the oil and rub it in the inside and outside of the pumpkin halves

  6. Place it in the oven for 50 minutes - take a fork to check if it is tender - if not, keep in the oven for 10 minute intervals until tender

  7. Let cool for 15 - 20 minutes and scrape insides from the pumpkin and place in a blender or food processor and blend until smooth

  8. Use immediately in your favorite recipes, keep in the fridge for 5 - 7 days or freeze for up to 6 months
