Very Vanilla Bean Cookies

A sweet, chewy cookie that’s satisfyingly vanilla!

  • 3/4 Cup Butter Unsalted
  • 1/4 Cup Shortening
  • 1 1/2 Cups Granulated Sugar
  • 2 Eggs
  • 2 1/2 Cups All Purpose Flour
  • 2 tsp Baking Powder
  • 1 tsp Salt
  • 1 Tbsp Vanilla Extract or Vanilla Bean Paste
  • 1 Vanilla Bean (Optional) Seeds Scraped Out


  1. Cream together the butter and shortening until light and fluffy.

  2. Add the sugar.

  3. Add the eggs, salt and vanilla and mix well.

  4. Add the baking powder and flour. Mix until fully incorporated.

  5. Scoop, about 1 Tbsp each, onto a greased or parchment lined baking sheet and bake at 350°F for 8-10 minutes. Do not overbake.

  6. Cool, drizzle with vanilla icing (next recipe) and enjoy!
