Sweet Cornbread

The most delicious, tender, fluffy, and moist cornbread around!

Ingredients

  • 1/2 Cup Butter 1 Stick
  • 1/2 Cup Granulated Sugar
  • 1 Egg
  • 1/4 tsp Salt
  • 1 Cup Buttermilk
  • 1/2 tsp Baking Soda
  • 1 Cup Cornmeal
  • 1 Cup All Purpose Flour
  • 1/2 Cup Sour Cream
  • 3/4 Cup Frozen Corn
  • 1/2 Cup Shredded Cheddar Cheese Optional
  • 1 4oz. can Green Chilis Optional

Instructions

  1. In a microwave safe bowl, melt the butter.

  2. To that, add the granulated sugar, salt, egg. Mix thoroughly.

  3. Add the buttermilk. Mix well.

  4. Then add the dry ingredients. Cornmeal, flour and baking soda. Just mix until combined. Do not overmix.

  5. Lastly, add the sour cream. Add the optional ingredients at this point as well.

  6. Pour into a greased 8x8 inch, or similar pan and bake at 350°F for 40 - 50 minutes or until a toothpick inserted comes out clean.
